What it is

Le Chat (pronounced “luh shah” — French for “the cat” / pun on “chat” as in “chat application”) is Mistral AI’s consumer chatbot. Mistral AI itself was founded in April 2023 in Paris by three former AI researchers (Arthur Mensch, Guillaume Lample, Timothée Lacroix — all ex-DeepMind / ex-Meta). The company has rapidly become Europe’s flagship AI lab and the strongest non-American AI provider available to Western users.

Mistral is significant because:

  • It’s European — primary servers in EU, French/European legal jurisdiction, GDPR-native
  • It releases many models open-weight (Mistral 7B, Mixtral 8x7B / 8x22B, Mistral Small, Codestral) alongside commercial offerings
  • It’s the AI provider French and EU institutions reach for when American-or-Chinese is unacceptable
  • It has a meaningfully different model voice — many users find Mistral less hedging and more direct than American competitors

Analogy: if Claude is “the thoughtful American one,” ChatGPT is “the famous American one,” Gemini is “the Google American one,” and Grok is “the contrarian American one” — Mistral Le Chat is “the European one.” Strongly competitive on capability, distinctively privacy-respecting by default, the natural choice when American AI is structurally inappropriate for your use case.

What you’d use it for

  • General chat — questions, brainstorming, drafting
  • When you want EU data handling — government / regulated / privacy-focused business users
  • Multilingual — particularly strong on French, Spanish, German, Italian, plus excellent English
  • Coding — Mistral has Codestral (specialised coding model) plus general Mistral Large
  • Image generation — Le Chat uses Black Forest Labs Flux (German, also EU-based) — excellent quality
  • Voice mode — Chat Voice (rolling out)
  • Document analysis — file uploads, summarisation, Q&A
  • Web search — Le Chat can search the web with citations
  • Flash Answers — Mistral’s high-speed answer mode
  • Canvas — collaborative writing surface
  • Agent / Connectors — integrations with Gmail, Calendar, Drive, GitHub, Notion, Slack rolling out

How to sign up + first 5 minutes from Australia

  5. Try one of these:

    • “Make me an image of a Parisian café at twilight” (uses Flux)
    • “Explain the EU AI Act in plain English”
    • “Help me draft an email in French” (Mistral excels at European languages)
  6. Optional — upgrade to Le Chat Pro. Bottom-left → Upgrade → Pro. €14.99/mo. AUS card accepted; billed in EUR with your card converting to AUD plus any foreign-transaction fee (use Wise / Revolut / ANZ Plus to avoid).

When to pick Le Chat over the American big three:

  • You want EU data residency by default, not as an enterprise add-on
  • You’re working with French / German / Spanish / Italian content
  • You prefer GDPR-native privacy framework
  • You value the open-weights option for self-hosting
  • You’re an Australian organisation with European customers / partners
  • You philosophically prefer non-American AI infrastructure
  • You want a strong second AI alongside an American primary

When the American big three are better:

  • You want the best coding agent (Claude Code)
  • You want native video gen (Sora, Veo)
  • You want the best voice mode (Advanced Voice)
  • You want deepest Office / Workspace integration (Copilot / Gemini)
  • You want the most-built browser-agent ecosystem (Operator, Mariner, Computer Use)

Privacy / data handling deep dive

Mistral’s posture is meaningfully different from American providers because the company is based in France and natively designed around GDPR.

Free Le Chat

Trains on your chats by default. To opt out:

  1. Settings → Privacy
  2. Use my data to improve Le Chat → toggle OFF

Le Chat Pro

Same opt-out path as free. Pro users may have stronger default tilt toward no-training depending on current product version — check the current Settings → Privacy state when you upgrade.

Le Chat Team / Enterprise

Does NOT train on your data. Contractually committed. Tenant-isolated. GDPR-compliant by design.

Mistral API

Does NOT train on your inputs by default. Inputs retained briefly for abuse-monitoring then deleted. EU data residency native.

Where data lives

EU data centres primarily (Mistral operates from France, partnerships with European cloud providers). Enterprise customers can pin to specific EU regions.

GDPR

Mistral is natively GDPR-compliant. Data Processing Agreement included by default for business customers. Right to erasure, right to access, data portability all supported.

Australian Privacy Act

Mistral is subject to the Australian Privacy Act when handling Australian personal information. Their GDPR-native handling generally meets or exceeds APP requirements.

Cross-border considerations

For Australian businesses subject to APP 8 (cross-border disclosure of personal information), Mistral’s EU-only data path is meaningfully simpler to disclose than US AI providers’ US-primarily-with-some-options paths.

Gotchas

  • EUR billing. The €14.99 price means AUS users see €→USD→AUD conversion plus typical 3% foreign-transaction fee (unless using a fee-free card like Wise / Revolut / ANZ Plus / UP / ING Orange One). Effective AUD price ≈ $24-26/month.
  • “Le Chat” pronunciation — “luh shah.” Don’t be the person at a conference who says “Le Chat” as English “lay chat.”
  • Mistral the company, Mistral the model family, Mixtral the architecture, Codestral the coder model — keep them straight. Le Chat the consumer app uses Mistral Large + Magnum as primary models.
  • Open-weight Mistral models are different from Le Chat the product. Le Chat is the polished consumer app; the open-weights you download yourself are raw models with no UI, safety layers, or features beyond inference.
  • Apache 2.0 license is genuinely open for most Mistral models — friendlier than Meta’s Llama license (which restricts >700M MAU companies). For Western open-weight AI without political-filtering concerns, Mistral is usually the best pick.
  • Some advanced Mistral features (Magnum reasoning, certain experimental models) are paid only. Free tier is still genuinely useful for daily chat.
  • Le Chat’s web search is real-time but indexes are not as comprehensive as Google / Bing-backed searches. For deep research with web grounding, ChatGPT Search / Gemini / Perplexity may produce broader citation sets.
  • The chat surface UI is in English by default; you can switch to French / Spanish / German / Italian in Settings — the model still handles them all in English UI, but the UI translation polishes the experience.
  • Mobile app cancellation — manage via App Store / Play Store, not via chat.mistral.ai.
  • Mistral periodically partners with Microsoft Azure for distribution; if you see Mistral models inside Azure AI Foundry, that’s the same underlying technology with Azure billing instead of direct Mistral billing.
